Gary Birkett  - HEAD CHEF

 

Born in Liverpool England  and trained as a Chef in Great Britain, I have a great passion for food and global cuisine.  I have 20 years experience and  have catered for major cricket and sporting and music events for VIP guests and artists. I have worked in Great Britain, Australia - Sydney opera house, Asia, Caribbean and Dubai. I love to explore world cuisines and regional dishes, I have a keen interest in chocolate making. Ex chefs at Spice Island Beach Resort, True Blue Bay Resort, also a passion for Asian food. I am a keen fisherman and football fan.  I am happy to cater for special diets and wiling to adapt dishes if desired.  I look forward to meeting you.   

Our ethos

In our menus we love to celebrate all that is great about Caribbean cuisine.  Our food is the freshest produce from our own Estate gardens and the market on a daily basis.  We only serve organic.  

The fish will be freshly caught.

Our Head Chef Gary was trained in Great Britain but has worked all around the world and he augments the Caribbean flavours with his international inspirations using only the freshest ingredients. We are open for dinner only to non-residents and you will be very welcome.
